Cupcakes, Friends & being Grateful

If moods could be predicted like the weather today mine would be gray and dreary. Fortunately, that this is not the case.  Rather than storming into Monday morning, I’m slowly easing my way into the day with my morning cup of tea.

Sipping, inhaling the steam and wrapping my fingers around the cup between typing sentences as I’m apt to do.  In the background a favorite Kacey Musgrave’s album, “Pagent Material” plays on, and the melodic, well written tunes inter flow perfectly with my current state of mind.

“We can’t do it over.
They say it’s now or never and all we’re ever gettin’ is older.

so let’s love hard, live fast, die fun.”

As I have these moments to reflect on the past weekend I sit back, smile and feel grateful. The weekend was full of laughter, relaxation and even a Saturday visit to some of my favorite humans. The goodness they bring to my life is undefinable, but I’ll give it a try.

These friends are more family than friends. Like my family they are steady reminder that no matter where you go, and no matter what happens you always have a place to come back to.  A place where people check in, not out of conversations, and where no subject is too uncomfortable to be discussed.  They understand that life is not always as perfect and that in fact at the truth of it, it’s very messy.

So as we sipped our wine, ate cupcakes and discussed upcoming weddings, house renovations and children I sat back and quietly for a moment remembering to take it all in. No matter where we are in our various stages of life I am forever grateful to have these individuals in my life.

As stated above, there were cupcakes….and who doesn’t love a cupcake? If you don’t, stop reading right now…seriously, why are you still reading?

These were my own little creation: Chocolate Cupcakes with a Strawberry Grapefruit Zest filling & Strawberry Vanilla Buttercream.  I also tried my first attempt at piping some interesting flower designs.  Not too shabby for a first attempt.

Now, a comment about these cupcakes…

First off, I’m a huge fan of chocolate cupcakes, but not just any chocolate cupcakes.  They have to be light, and airy, almost to the point of being a sponge, but they also have to be strong enough to hold up to a filling.

These were very ,very good.  While they got a fair share of great reviews I’m holding off on providing a recipe until I am fully satisfied with my results.
