And in breaking news. ….. Yesterday, I saw the largest shrimp EVER at the grocery store. (Ok, maybe not ever, but still these guys were huge!) So on the side of being healthy and green I decided to get a few of these lovely creatures and make up a large salad. This salad fulfilled my every need. If you love greens, shrimp, and a tad of Gorgonzola, this salad was made for you. 🙂
Ingredients (for two)
-4 colossal shrimp (raw)
-2 cups spinach (raw)
-2 cups butter lettuce
-1 cup shredded cabbage
-1 cup arugula
– 2 leaves fresh basil (torn)
-1/3 cup bell pepper (chopped)
-1/3 cup carrots (chopped)
-1 radish (sliced thin)
-1/2 an avocado (sliced)
-4 olives of choosing
-2 tbsp of crumbled Gorgonzola cheese
-1 tbsp olive oil
-1 tsp Old Bay and Seafood Magic seasoning combined
-1 tsp crushed garlic
-Splash of white wine
1-Wash and clean spinach, lettuce, arugula and all vegetables.
2-Chop the bell pepper and carrots.
3-Remove the pit of the avocado and slice into preferred size sections and remove from peel.
4-Slice radish thinly.
5-Distribute the spinach, lettuce, arugula, and cabbage evenly among two bowls.
6-Top with vegetables, torn basil, cheese and olives.
7-Clean and devein shrimp. Leave tails on.
8-Season shrimp with old bay and seafood magic.
9- Heat 1 tbsp of olive oil in a pan over medium high heat.
10-Add shrimp and crushed garlic to the pan. Then add butter and a splash of white wine.
11- Cook for 2 minutes per side or until shrimp is pink and no longer translucent.
12-Top each salad with two colossal shrimp.
13-Enjoy as is or with dressing of choice.
