There’s something about the mix of mango, arugula and spinach that never ceases to amaze me.
It is fresh, clean, bright and of course green 🙂 It is also delicious. I sometimes chow down on a giant bowl of this at my desk. And believe me when I say chow down, I mean CHOW down. I sometimes like to imagine a co-worker walking by my cube at this unfortunate time. Would they be disgusted or impressed by the amount of hearty green shoots dangling from my mouth? Either way, go make this salad….NOW!
-Lime juice (I use about half a lime per serving)
-Mango salsa (recipe below)(about 1/3 cup per serving)
-Mozzarella pearls(I use 6-8 per serving)
1. Rinse spinach and arugula and place in bowl.
2. Splash with lime juice.
3.Top with mango salsa
3.Scatter with mozzarella pearls
4. Stuff your face 🙂
-1 mango (chopped)
-1/2 red bell pepper and 1/2 green bell pepper (chopped)
-1 jalapeno (diced)
-1/8 cup red onion (diced)
-1 clove garlic (diced)
-1/2 lime juiced
-fresh cilantro if you like
1. After you have chopped, diced or squeezed ingredients stir together in a bowl.
2. Eat immediately or store in fridge for up to 3-4 days.
