While every fish may have had big dreams, I’m sure none of them involved turning into a fish cake. (Let’s face it that would be pretty self sacrificing, and bizarre.)
But what does one do when haddock is on sale and you have plenty of leftovers from fish taco night? Make delightful fish cakes of course. They are quick easy and absolutely delicious.
-1/2 lb of pre baked seasoned haddock
-1/3 cub bread crumbs
-Salt, pepper and whatever other seasonings or herbs you may want.
1-Flake leftover haddock but still leave some bite size pieces.
2-Mix in egg, breadcrumbs and seasoning. You may need more or less breadcrumbs depending on consistency.
3-Heat a pan over medium high heat, and drizzle in about 2 tsp of olive oil.
4-Shape mixture into two patties and cook on each side for about 3 minutes or until each side is golden and patty is cooked through.
I served on top of fresh spinach and arugula with a little Chipotle ranch, but depending on the seasoning profile you chose this dish can be dressed up or down and the results would go swimmingly either way.
