Ingredients for two:
2 cups Baby kale salad mix
1 cup watercress
1 cup arugula
½ carrots (sliced thin on an angle)
½ cup celery (diced)
½ beet (thinly sliced)
1/3 cup pomegranate seeds
1. Rinse salad mix, watercress and arugula.
2. Place in bowls.
3. Scatter vegetables and pomegranate seeds over greens.
4. Top with dressing of choice. Healthy Tip: I like to use half a lime as dressing for my salads. It adds a light crisp citrus note and very few calories.
